在《本草纲目拾遗》中记述:“豆腐又名菽乳,以豆腐腌过酒糟或酱制者,味咸甘心。
早在公元五世纪,北魏时期(公元386-534年)的古书上就有“干豆腐加盐成熟后为腐乳”之说。
明代我国就大量加工腐乳。
而今腐乳已成长为具现代化工艺的发酵食品。
腐乳,性平,味甘。
所含成份与豆腐相近。
具有开胃消食调中功效。
可用于病后纳食不香、小儿食积或疳积腹胀、大便溏薄等。
豆腐乳做菜的方法
一、豆腐乳炒青菜
1.准备食材:新鲜的青菜,例如莴苣、空心菜或菜心等,豆腐乳、蒜末、食用油、盐。
2.预处理食材:将青菜洗净,切成合适的长度备用;将蒜末准备好。
3.炒菜过程:热锅加入适量的食用油,烧热后加入蒜末翻炒出香味;然后放入豆腐乳翻炒几下;将青菜放入锅中,翻炒均匀;最后加入适量的盐调味即可。
二、豆腐乳炖排骨
1.准备食材:排骨,豆腐乳、姜片、蒜末、食用油、盐、料酒。
2.预处理食材:将排骨洗净沥水备用;将姜片切成薄片;将豆腐乳压成糊状备用。
3.炖煮过程:将锅加热,加入适量的食用油,将姜片和蒜末煸炒出香味;倒入排骨煸炒均匀;加入适量的料酒炒匀;加入足够的水,烧开后撇去浮沫;倒入压好的豆腐乳,调匀,加盖,小火慢慢炖煮1-2小时;最后加入适量的盐调味即可。
三、豆腐乳和牛肉煲
1.准备食材:牛肉,豆腐乳、姜片、蒜末、食用油、盐、料酒、胡椒粉。
2.预处理食材:将牛肉切成适当大小的块状备用;将姜片切成薄片;将豆腐乳压成糊状备用;将蒜末准备好。
3.煲炖过程:将锅加热,加适量食用油,放入姜片和蒜末炒出香味;
加入牛肉,翻炒变色;加入适量的料酒炒匀;加入足够的水,烧开后撇去
浮沫;加入豆腐乳糊,搅拌均匀;小火炖煮1-2小时,直到牛肉煮熟变嫩;最后加入适量的盐和胡椒粉调味即可。
四、豆腐乳炒鸡蛋
1.准备食材:鸡蛋,豆腐乳、食用油、葱花、盐。
2.预处理食材:将鸡蛋打入碗中打散备用;将豆腐乳压成糊状备用;
将葱切成葱花备用。
3.炒鸡蛋过程:热锅加入适量的食用油,烧热后倒入鸡蛋液;翻炒至
鸡蛋凝固成块,切成小块;加入豆腐乳糊,搅拌均匀;最后撒上葱花和适
量的盐调味即可。

三、潮汕牛肉丸牛肉丸制作原料主要有牛肉、淀粉等,也是广东有名的小食,讲究手工制作,口感爽脆,可分为牛肉丸、牛筋丸两种,其中牛肉丸肉质较为细嫩,牛筋丸则是在牛肉丸里加进一些嫩筋以提升嚼劲。
改革开放以来,牛肉丸成为潮汕特色美食美名远扬,其中尤以用料上等口味正宗的——垄美斋牛肉丸著称。
吃牛肉丸有不少人蘸辣椒酱,不过还是蘸本地特产沙茶酱最为地道。

四、卤鹅鹅的烹制方法各地不同。

六、潮汕粿汁在潮汕街上,随处可见卖粿汁的小食摊,叫一碗热腾腾好像粿条般滑口的粿片,淋上浅棕色的卤汁,再点些卤猪肠、卤肉、卤蛋、豆干或菜尾等,这就是粿汁了。
潮汕粿汁色白汤稠,口感嫩滑,入口即化,主要以卤汤为入味,散上菜脯粒,咸香可口。

常见湘菜谱东安子鸡【菜名】东安子鸡【所属菜系】湘菜【特点】色泽淡黄,酸辣鲜咸。
【原料】嫩母鸡1只(重约750克,)红柿子椒25克,葱丝25克,姜丝25克,花椒20余粒,花生油90克,味精2克,醋50克,淀粉15克,香油10克,老蒜10克,盐少许,干辣椒适量。
【制作过程】(1)将净膛鸡洗净,放入锅内煮至不带生血捞出,晾凉提去全部鸡骨,切成4厘米长、1厘米宽的条,用湿淀粉上浆。
柿子椒去子切长丝。
干辣椒、老蒜切末,花教拍碎。
(2)锅内放油烧热,投入干辣椒稍煸,随后加入葱丝、姜丝、柿子椒丝、蒜末、花椒一起煸炒,在下入鸡条煸炒,加入味精、盐、醋和少许鸡汤,盖锅焖10分钟,用水淀粉勾芡,淋香油,盛入盘中即成。
锅贴鱼【菜名】锅贴鱼【所属菜系】湘菜【特点】色似金黄闪光,鱼片腊香鲜嫩,临食蘸上椒盐,更显味道特佳。
【原料】主料青鱼肉200克,肥膘肉100克,火腿米50克,香菜末50克,鸡蛋1个,玉米粉适量。
调料植物油100克,香油25克,湿淀粉30克,料酒18克,味精2克,盐2克,椒盐少许,葱末10克,姜末10克。
【制作过程】 (1) 把青鱼肉和肥膘肉片成同样大小(鱼肉厚0.6厘米、猪肉厚0.3厘米)的4大片。
(2) 用盐、味精、香油、鸡蛋(多半)、料酒、葱末、姜末等分别煨好。
(3) 用肥膘肉铺底,上面撕玉米粉,用少量鸡蛋、湿淀粉调成稀芡糊,在鱼片上挂上一层,然后放在猪肉上,中间撒上火腿米,两边撒上香菜末。
(4) 炒勺内倒入植物油(50克),用文火烧热,猪肉面向下,放入勺内煎。
(5) 移入旺火,倒入余量油炸至金黄色,捞出后切成小片,整齐地码在盘内即成。
红椒酿肉【菜名】红椒酿肉【所属菜系】湘菜【特点】【原料】原料泡红鲜椒 500克猪肉 300克金钓虾、水发香菇各15 克鸡蛋 1个蒜瓣50 克【制作过程】红椒酿肉猪肉剁成泥,虾、香菇洗净剁碎,加肉泥、鸡蛋、味精、盐调淀粉成馅;泡红椒在蒂部切口去瓤,填入肉馅,用湿淀粉封口,炸至8成熟捞出;底朝下码入碗内,撒上蒜瓣上笼蒸透,滗出原汁翻扣在盘中。

主料红尖椒2个空心菜500克辅料色拉油适量食盐半茶匙鸡精半茶匙蒜3瓣腐乳2块白糖1/3茶匙
1 通菜洗净,掐成段备用
2 红椒切丝备用,蒜蓉拍碎,腐乳放在碗里,再倒一些腐乳汁,将之捣成泥备用
3 大火起油锅,待油热之后放入蒜头爆香,再加入红椒丝、捣烂的腐乳一起爆香
4 然后将通菜倒入快速翻炒
5 等菜炒软后,撒入盐、鸡精和糖调味即可。
